Bénédicte & Stéphane Tissot 'Indigène' Crémant NV
Varietals: Chardonnay - Pinot Noir - Poulsard - Trousseau
Region: Jura - France
A blend of Chardonnay and Pinot Noir with a touch of two grape varieties indigenous to the Jura, Trousseau and Poulsard. The latter giving a real intensity to the wine. Super dry, the wine has zero dosage, there is a real savoury lick to the finish.
We love all wines from Bénédicte & Stéphane Tissot, the Indigène is no exception.
The second fermentation of the wine is started with the addition of Tissot's own liqueur de tirage, their still fermenting straw wine. This as opposed to the more common practice of using selected Champagne yeasts gives a slower fermentation, producing more complexity and a more indigenous wine, hence 'Indigène'.
